What is the difference between a chocolatier and a chocolate maker?

A chocolate maker focuses on creating chocolate from cacao beans. A chocolatier uses chocolate to create confectionery.

What is confectionery?

These are food items that are rich in sweetness. This originally meant that confectionery creations, or "confections," contained lots of sugar. However, there are many artificial sweetener opportunities available today for which the term can still apply.

What is couverture?

This is a term used to describe high quality chocolate that is rich in cocoa butter. Couverture is often used in gourmet applications. Its total fat content typically ranges from thirty to forty percent.
